Bánh khoai môn tàn ong - Crispy Taro Dumplings 芋頭角 Wu Gok




































Hôm nay tôi tập làm bánh khoai môn tàn ong này xem có cạnh tranh được với các nhà Tầu làm Dim-Sum không đây!  Thật ra cũng không đơn giãn cho lắm.  Nhất là khi chiên bánh lửa phải lớn ở độ đúng - lửa lớn thì bánh chai khét không ra tàn ong - còn nhỏ thì bánh nở teng beng tét lét ... Woa!  Tôi chiên tới cái thứ 5 mới điều chỉnh được độ nóng của dầu và cách chiên như thế nào để đạt được ra cái bánh gọi là tạm coi được ... Nhân thì thật là ngon ... phải nói là ngon! Con gái ăn thử nói thế.

Crispy Taro Dumpling by Eupho Cafe

Ingredients: (24 pieces)
Filling:
150g lean pork
150g peeled shrimps
3~4 dry shitaki mushrooms
1 clove of garlic, minced.

Wrap:
giant taro (peeled) 600g
113g lard or unsalted butter
113g wheat starch
3/4 cup of boiling water (180 ml)
1T baking soda
half T salt
1 TB sugar.

Seasonings : 
Salt half T
1/4 T sesame oil
ground white pepper to season
1/4 T sugar
dissolved starch (combine half TB of starch with 4 T of cool water).

Procedure: 
1. Soak mushrooms in water till softened; remove stems, sliced and chopped. Slightly freeze pork and shrimp, then chopped into small chunks. Heat 2 TB of oil in skillet, stir fry minced garlice, then stir in pork, shrimps, and mushrooms; when cooked, add seasonings and stir well; turn off the heat and let cool.
2. Cut taro into slices in thickness of about 1 cm. Arrange loosely in a steamer, steam till thoroughly cooked. Remove from steamer and smash while it’s still hot.
3. Stir 3/4 cup of boiling water into wheat starch with a fork to form a rough dough. When the temperature dropped a little bit (still hot, butdoesn’t hurt your hands), combine the dough with mashed taro, and then add lard, soda, salt and sugar, fold in and knead completely. Please see attached picture A for the fully combined dough. * You'll need to get rid of the taro lumps found in the dough while kneading it.
4. Roll the dough to form a ball, cut into 4 parts, and then roll each part into a stick, and cut into 6 pieces. For each piece of dough, roll it out to a dumpling wrap, scoop fillings on top, and then hold the dumpling in your hands to form an oval-shaped dumpling; see attached picture B.
5. Place dumplings in a drainer and deep-fry in high heat till color turns brown and the skin is covered with crispy nettings. Drain, and leave on paper towels to get rid of excess oil.

Wendy's Note: 
1. This kind of taro is usually very big in size, just a little bit smaller than a pineapple. When choosing a taro, pick those are lighter in weight because they contain less liquid and would be the best choice for making this dessert. After you steamed the taro, the texture should be dry and almost powder-like.
2. The key point for making it should be the temperature of the frying oil. If the temperature is too high, then the color would trun brown quickly and the netting effect on the skin would fail to come out. If the temperature is too low, the skin would be peeled off and the filling might start leaking while the skin is broken. The way how I test the temperature of the oil is that, drop a taro lump (remember? we got some lumps while kneading the dough.) into the oil, it should sink to the bottom and stay there for one second, and then float up to the surface quickly. If you're still confused about the temperature, just try different heat settings, and you should be able to figure it out after few trials.
3. If substitute the lard with unsalted butter, remember to remove it from the refrigerator earlier to have it softened.
4. Fried dumplings should always be finished as soon as possible because the crispy skin will turn soggy and greasy in few hours.

Foot Note: 
1 cup = 240 c.c. = 240 ml
1 tablespoon = 15 c.c. = 15 ml
1 teaspoon = 5 c.c. = 5 ml

Tạm dịch:

Bánh khoai môn tàn ong (24 bánh)

Nhân:
150 gr thịt heo xay (lựa thịt đùi có chút mỡ thì béo ngon)
150 gr tép bằm (lột vỏ, lau khô rồi bằm nhỏ)
3~4 nấm đông cô khô ngâm nỡ bằm nhỏ
1 tép tỏi băm nhỏ

Gia vị cho vô nhân:
1.5 tsp muối
1 tsp dầu mè
chút tiêu sọ trắng thì thơm hơn
1 tsp đường
1/2 tsp bột ngũ vị hương (tùy thích - nhưng tui thích!)
1 tsp rượu thơm (tùy thích)
pha nước bột bắp (hòa tan 1.5 tsp bột bắp với 4 Tbsp nước lạnh)

Vỏ bánh:
600 gr khoai môn - cắt nhỏ - hấp chín - nghiền nát (dùng potato ricer ép khi còn nóng rất nhanh gọn và rất nhuyễn)
113 gr (1 stick hay 1/2 cup) bơ lạt để mềm (hay lấy lạnh ra để microwave 20 giây sẽ vừa mềm)
113 gr bột tàn mì (wheat starch)
3/4 cup nước sôi (180 ml)
1 Tbsp thuốc tiêu (baking soda)
1.5 tsp muối
1 Tbsp đường

**Trộn tất cả phần nhân + gia vị trừ hổn hợp bột bắp pha.  Cho lên chảo xào chín thịt rồi hảy cho hổn hợp bột pha vào xào quện là được - cho ra đĩa để nguội - ép ra đĩa rồi chia ra làm 24 phần đều nhau (độ 1 Tbsp mỗi bánh)
**Khoai môn hấp chín - lúc còn nóng đem ép qua cái potato ricer sẽ rất nhuyễn.
**Cân bột tàn mì - đong nước đun sôi lên rồi đổ vô bột - dùng đũa khuấy lên -- bột sẽ trong và lợn cợn không đều nhưng không sao cả.
**Cho bột tàn mì vô với khoai tán nhuyễn - đeo găng tay bóp đều.  Khoai sẽ nguội bớt.
**Cho bơ + baking soda + muối + đường = bóp nhuyễn và mịn.
**để bột nghỉ 5 phút rồi chia ra làm 4 - xong vo mỗi phần thành 1 thỏi dài - rồi chia thỏi ấy ra làm 6.
**Nắm bánh = đeo găng tay rồi thoa dầu thì rất dể làm - đem cục bột nhỏ ép trên lòng bàn tay trái rồi dích nhân để lên - túm tròn lại - vo thành hình bầu dục như quả banh football.
**Để dầu nóng - thử dầu = cho chiếc đủa đụng đáy nồi thấy có bong bóng nổi lên là dầu nóng -- bếp của tôi thì để số 8 là vừa lắm.
**Thả bánh vô chiên -- lần đầu làm nên chiên từng bánh một để dể xem chừng.  Khi thả bánh vô phải để khoãng 1/2 phút (miệng đếm từ 1 đến 20) thì trở bánh -- không nên liền tay trở bánh như trở bánh tiêu thì bánh sẽ bị bung ngay.  Phải để yên cho vàng hơi 1 mặt rồi hảy trở qua mặt khác ... cứ mỗi mặt xoay là đếm đến 20.  Sẽ ra vừa ý -- Bánh đang chiên sẽ không phồng như mình nghỉ đâu ... giống như là bột chiên chai vậy ... nhưng khi vớt ra lên khay để nguội thì bánh bắt đầu nỡ bung trông rất ngộ mắt!!! Cứ thế mà chiên cho đến hết.
**Cho bánh lên giấy lót làm bánh cupcake để thấm dầu - Bánh này ăn nóng ra rất ngon.  Khi để nguội cần ăn lại thì mình có thể toast lại cũng sẽ giòn vỏ ngoài và ấm bên trong như khi mới chiên ra.

Chi oi, em moi lam banh khoai mon chien theo cong thuc cua chi xong , nhung luc chien thi em de lua nho nen bi be ra het tron . Luc sau em de lua that lon thi ddo hon . Banh rat ngon giong nhu em an nha hang tau vay .Xin chi cho em hoi minh nen de banh trong tu lanh roi hay chien va luc chien bo vo chao mot cai thoi hay co the nhieu cai 1 luc . 1 cai banh nhu vay chien khoang bao lau.
