Homemade Bagels

Tôi học từ online "Taste of Home" rất dể làm và ngon mềm.

Kinh nghiệm:
bagels sẽ nở khi cho vào luộc và nở thêm khi nướng khô cho nên làm cái vòng giữa to ra 1 tí khi bánh nở sẽ vừa có lổ to.  

Cinnamon raisin bagels: thì khi nhồi bột cho thêm 1 tsp cinnamon powder. Đánh bột bằng máy Kitchen Aid xong lấy ra cho vào 1/2 cup nho khô vào. Mình có thề làm crainberries bagels, hoặc blue berries bagels - cứ như công thức này mà thêm trái cây khô mình muốn ăn.

 INGREDIENTS
1 tsp. active dry yeast
1 1/4 C. warm milk (110 to 115* F)
1/4 cup butter or margarine, softened
2 Tbsp. sugar
1 tsp. salt
1 egg yolk
3-3/4 C. all-purpose flour

 DIRECTIONS
In a mixing bowl, dissolve yeast in warm milk.
Add the butter, sugar, salt and egg yolk; mix well. Stir in enough flour to form a soft dough.
Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes.
Place in a greased bowl, turning once to grease top.
Cover and let rise in a warm place until doubled, about 1 hour.
Punch dough down. Shape into 12 balls. Push thumb through centers to form a 1-in. hole. Place on a floured surface. Cover and let rest for 10 minutes; flatten.
In a large saucepan, bring water to a boil. Drop bagels, one at a time, into boiling water. When bagels float to the surface, remove with a slotted spoon and place 2 in. apart on greased baking sheets.
Bake at 400 degrees F for 20-25 minutes or until golden brown.
Remove from pans to wire racks to cool.

 Theo kinh nghiệm làm:
-Có thể thế vào butter bằng 2 Tbsp oil
-Cho thêm 2 Tbsp đường brown sugar hay nước mầu hay là mollasses syrup vào nồi nước luộc bagels.  

I revised recipe after the 3th time making bagels:
2 tsp. active yeast
1.5 c. warm milk (or warm water at 110-120*F)
3 Tbsp. sugar
1 tsp. salt
1/4 c. butter softened (1/2 stick) or 2 Tbsp oil
1 egg yolk (optional)
4 c. all purpose
1/2 c. raisin (optional)
1 tsp cinnamon (optional)  

1-Heat milk to 110*F - Dissolve sugar - Add yeast and let rise for 10 minutes.  
2-Mix egg + butter or oil  
3-Add salt to flour into KitchenAid mixer with a dough hook -then add mix yeast - knead for 6 minutes - add (egg yolk) soft pieces butter - continue to knead for 5 more minutes. (add raisin and cinnamon if making cinnamon raisin bagels) - if in one load we want to make 1/2 plain and 1/2 raisin then keep continue step 7.  
4-Oil the bowl and the flour ball - cover it with a plastic bag in room temperature - let the dough rise double for 40 minutes.  
5-Knead dough down - on a floured surface, divide dough into 12 round balls.  
6-shape bagels (1)make a ball out of a dough then push a thumb to the center making a hole about 1 in - (2)roll the dough out flat then roll into a long tube, gather 2 ends with water - make sure the center hole is about 1 in.
 7-Keep shaped bagels on a floured baking sheet and cover them again with plastic bag - let rise for 30 minutes. If we want to make cinnamon bagels then add 1 pinch of cinnamon powder to the piece of dough and 1 Tbsp full of raisins and knead all into it. Shape it as usual.
 8-Boil water in a large pot, add 3 Tbsp molasses or brown sugar or caramel out of sugar.  
9-Drop bagels one at a time. Let them cook for 1 more minute each side when it float to the top. Bagels should inflate double the size.  
10-Lift bagels out with a slotted spoon, let it dry on napkin. (if top with poppy seeds, sea salts, sesame seeds, or dried onions we should roll the top in the seeds now - for more flavor, all seeds should be pre-roasted)  

11-Trasfer bagels to a oiled baking sheet.  
12-Bake 20 minutes at 375 *F or until golden brown - place baking rack at the middle of oven.  
13-Allow to cool down for 1/2 hours.
14-Suggest to slice bagel in half before store them in ziploc bag then they are ready to eat.

Bagels can be freeze and just take them overnight for defrost - Toast to warm it up and enjoy either with butter, cream cheese or homemade blackberries jam is always my husband favorite!
