SANDWICH COFFEE BREAD










 thoa dầu khuôn rồi rắt bột áo = nướng ra vỏ bánh không được đẹp - mai này chỉ thoa dầu thôi không rắt bột áo nữa.
 nho ngâm 10 phút trong nước ấm - vớt để ráo mới cho vô bột

 cuộn cinnamon sugar + butter chunks 
Nho cũng cho vô như vầy rồi cuộn
1 cuộn không có nhân để giữa








Khuôn nhỏ 10.1/4 x 3.5/8 x 2.1/2 in

250 gr APF + 1/4 tsp gluten
5 Tbsp cold milk
5 Tbsp cold whipping cream
4 Tbsp icy cold water
1 Tbsp beaten egg
2 Tbsp honey
1/2 tsp kosher salt
1.5 tsp active dry yeast
1 Tbsp soft butter

Optional: 
2 Tbsp cinnamon sugar (optional) for 1 roll
2 Tbsp dried raisin (soak in warm water for 10 min.) (optional) for 1 roll
1 roll leave as it

Mix all and knead with KitchenAid stand mixer for 30 min.
Dusting with flour - take dough out on counter - FOLD 20 times => dough will be more elastic and easier to handle.  Round dough. 
Place dough in an greased bowl - cover - Proof 1 hr in a warm place => dough raises double
Dusting with flour - take dough out on surface - FOLD few more times
Divide in 3 portions - Spread out and roll up (add cinnamon butter sugar or raisins as you wish)
Place rolled up dough in greased Pullman pan
Cover with plastic wrap until dough raises up almost to the top rim -- Place the over onto Pullman pan.
Preheat oven to 425*F -- when oven ready - place pan in - bake 25 min.
Do not turn off oven - take bread pan out -- open lid - put bread pan in and continue to bake 5 min. more until the top bread golden brown.
Take bread pan out - tap on hard surface 2-3 time to release the bread from it pan. 
Bread out on the rack to cool down.
Yummy sandwich flavor bread with coffee !!!
